This Lemon Butter Chicken is so incredibly delicious! Seared seasoned chicken, with a super yummy lemon butter sauce that gets coated all over. Lemon, Butter, Dijon mustard and Chicken broth simmered to make the best sauce ever!
Pound the chicken out thin and even, then season the chicken with the poultry seasoning, salt and pepper on both sides.
In a large skillet, add the vegetable oil and the seasoned chicken. Cook on medium to high heat for about 5 minutes on each side. You want the chicken to have a golden sear on it.
Once the chicken is fully cooked and seared, take the chicken out and set it aside. Add the chicken broth to the skillet and allow it to bubble. Be sure to scrape all of the chicken juice and good seasoning off the bottom of the pan and mix it in with the chicken broth.
Add the Dijon mustard, butter and lemon juice to the chicken broth. Whisk together on medium-low heat until everything is melted together. Stir until the sauce thickens, then turn off the heat.
At this point, add the optional honey to the sauce if you'd like. Add the chicken back to the pan and flip all over to coat in the sauce. Allow the chicken to rest in the sauce for at least 5 minutes to soak up as much flavor as possible. Sprinkle with parsley and serve!
