These Monster Jello Cookies are a perfect treat for spooky season! Only requiring a handful of ingredients and 15 minutes of prep time, they are bound to be a hit at your Halloween party!
Preheat your oven to 400 degrees and line a baking sheet with parchment paper. Set aside.
In a large bowl, combine the butter and sugar until light and fluffy. Add the eggs and vanilla ,then mix until combined.
Add in the flour and baking soda until well combined.
Separate the dough evenly into 3 bowls.
Add 2 tablespoons of lime jello mix to a bowl, 2 tablespoons orange jello mix to another, and 2 tablespoons grape jello mix to another. Add 2-3 drops of food coloring to the corresponding bowl. Mix together until the color and jello is mixed into the dough evenly.
Roll your dough into about 1 ½ inch balls and roll them in a bowl of granulated sugar. Place the balls on the prepared baking sheet. Using the bottom of a glass or jar, flatten the cookies slightly and gently press candy eyes into each cookie.
Bake for 8-10 minutes, or until the cookies are just golden on the bottom.
Let the cookies cool slightly on the baking sheet until transferring them to a rack to cool.
Serve!
