Pat the chicken dry and sprinkle both sides with salt and pepper, then place in a 4qt or larger slow cooker.
Add all of the ingredients for the Ranch Seasoning into a small bowl and mix together. If you want it to have a finer consistency, grind it in your food processor.
Sprinkle the Ranch Seasoning evenly over the chicken.
Scatter the cream cheese in chunks over the chicken, close the lid, and cook on low for 7 to 8 hours or on high for 3 to 4 hours.
Once cooked, shred the chicken directly in the slow cooker with two forks.
Fill in 1 cup of the cheddar and ¾ of the crumbled bacon and stir everything together
Spread the remaining 1 cup of cheese on top and cook with the lid on for another 10 minutes on low to melt the cheese.
Serve with remaining bacon and scallions on top over rice or side of your choice.
