Cosmic Brownie Truffles are a bite-size dessert inspired by the classic Little Debbie snack! Brownie mix, chocolate frosting, chocolate chips, and mini rainbow chips combine to make these fudgy truffles!
Brownie mixplus additional ingredients required to make brownies
½can of chocolate fudge icing
12ozchocolate melting wafers
Rainbow mini candy-coated chips
INSTRUCTIONS
Bake your brownies according to box instructions.
Once the brownies are finished baking, dump them into a large mixing bowl. Using a stand mixer with a paddle attachment, hand mixer, or a fork, mix the brownies until they're broken apart and crumbled.
Melt the chocolate icing in the microwave for about 15 seconds to soften it. Remove from the microwave and pour ½ of the can into the crumbled brownie mixture. Mix together until fully combined. You may skip this step if your house is on the warmer side and the frosting has already softened.
Using a medium cookie scoop, portion the brownie mixture into equal-sized bites and roll them around in your hands to create a ball shape. Once they're rolled, set them aside on a baking sheet lined with parchment paper, then place in the refrigerator for 1 hour to chill.
Melt the chocolate chips in a bowl in the microwave in 30-second increments or use a double boiler until completely melted.
Carefully drop one ball at a time into the melted chocolate with a fork, and roll the ball around to coat all sides with chocolate. Once the ball is completely coated, lift it out of the chocolate with the fork and allow the excess chocolate to drip off before transferring the ball back to the baking sheet. Repeat with the rest of the balls, leaving about 2 inches of space between each one on the baking sheet to give plenty of space to cool and settle.
Once each ball is back on the baking sheet, immediately sprinkle with mini rainbow chips. Allow the truffles to harden and set completely before enjoying!
NOTES
Storage instructions: Store in the refrigerator for up to 5 days in an airtight container. Rainbow sprinkles may be substituted for rainbow chips.
