Cosmic Brownie Truffles are a bite-size dessert inspired by the classic Little Debbie snack! Brownie mix, chocolate frosting, chocolate chips, and mini rainbow chips combine to make these fudgy and delicious truffles!

Cosmic Brownie Truffles are so easy to make using boxed brownie mix! You’ll want to save this recipe if you’re a brownie lover like myself! These are perfect to bring for potlucks and celebrations, and look like they’re straight out of a bakery with minimal effort!

Out Of This World Dessert

Taste: Cosmic Brownie Truffles are a chocolate lover’s dream! Real brownies crumbled and combined with chocolate fudge icing, then coated in melted chocolate—it doesn’t get better than three different chocolate flavors!

Texture: The outer coating of Cosmic Brownie Truffles is nice and crisp from the chocolate shell combined with the crunchy rainbow candy-coated chips, but as soon as you take a bite into the brownie layer, you’ll see that These Truffles are smooth and FUDGEY!

Cosmic Brownie Truffle Ingredients

These truffles are packed with flavor and minimal ingredients!

  • Brownie Mix– You can use your favorite brand of brownie mix! You’ll also need the ingredients to make the brownies. This varies from brand to brand but typically consists of water, vegetable oil, and eggs.
  • Chocolate Frosting- You can make your own chocolate frosting or buy the canned stuff from the grocery store.
  • Chocolate Melting Wafers—These are used for the outer shell of the truffles. I like to use chocolate melting wafers, but you can also use chocolate chips or mini chocolate chips.
  • Mini Rainbow Chips- The cosmic brownie staple! These don’t affect the overall flavor of this recipe, only the way they look.

How To Make Cosmic Brownie Truffles

Step One: Bake your brownies according to box instructions.

Step Two: Once the brownies are finished baking, dump them into a large mixing bowl. It’s okay if they’re still hot from the pan. Using a stand mixer with a paddle attachment, hand mixer, or a fork, mix the brownies until they’re broken apart and crumbled.

Step Three: Melt the chocolate icing in the microwave for about 15 seconds to soften it. Remove from the microwave and pour ½ of the can into the crumbled brownie mixture. Mix together until fully combined. You may skip this step if your house is on the warmer side and the frosting has already softened. 

Step Four: Using a medium cookie scoop, portion the brownie mixture into equal-sized bites and roll them around in your hands to create a ball shape. Once they’re rolled, set them aside on a baking sheet lined with parchment paper, then place in the refrigerator for 1 hour to chill.

Step Five: Melt the chocolate chips in a bowl in the microwave in 30-second increments or use a double boiler until completely melted.

Step Six: Carefully drop one ball at a time into the melted chocolate with a fork, and roll the ball around to coat all sides with chocolate. Once the ball is completely coated, lift it out of the chocolate with the fork and allow the excess chocolate to drip off before transferring the ball back to the baking sheet. Repeat with the rest of the balls, leaving about 2 inches of space between each one on the baking sheet to give plenty of space to cool and settle.

Step Seven: Once each ball is back on the baking sheet, sprinkle with mini rainbow chips immediately. Allow the truffles to harden and set completely before enjoying!

Tips And Tricks To Make Cosmic Brownie Truffles

  • You may use baked brownies from the bakery section of your grocery store. I recommend heating them up slightly to get the best crumble.
  • Allow the truffles to chill in the freezer for 15 minutes or the refrigerator for 1 hour once they’re rolled into the balls to make the chocolate dipping easier.
  • You may add additional mini rainbow chips in the brownie mixture before you roll them into balls, if desired.

Storage Instructions

Store Cosmic Brownie Truffles in an air-tight container for up to 5 days in the refrigerator. These can be frozen in a freezer-safe container for up to 3 months. Allow the Cosmic Brownie Truffles to come to room temperature before enjoying. Do not microwave the balls to speed up the thawing process!

Where Can I Find Mini Rainbow Chips?

I found mine at Hobby Lobby in the baking section, but you can also find them on Amazon!

If you are unable to find the mini rainbow chips or you’re in a hurry, rainbow sprinkles or mini chocolate chips may be substituted.

FAQ’s

Why are the brownies not sticking together?

If the brownies aren’t holding their shape, try warming the brownies up again in the microwave until they’re hot and steamy. The steam is a good binder for the brownies to hold together. You can also add any leftover frosting to help the balls stick.

Can I use chocolate chips instead of melting wafers?

Yes. Follow the same directions for melting the chocolate chips.

Does this recipe use a whole box of brownie mix? Can I half this recipe?

Yes, it does. There’s not really a way to make only half a box of brownies, so if you’re looking to half this recipe, I recommend baking the entire box of brownies, but only using half of the cooked tray to make the truffles. You can do so by halving the entire recipe, and saving the other half of your tray of brownies for another recipe, or to enjoy on its own.
