INGREDIENTS

  • 1 pound ground beef
  • 1 medium white onion finely diced
  • 1 clove garlic minced
  • 1 (14oz.) can kidney beans undrained
  • 1 (5.5oz.) can tomato paste
  • 1 (10oz.) can Rotel diced tomatoes and green chilies
  • 2 Tablespoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon granulated sugar
  • ½ teaspoon ground cumin
  • 1 (9.25oz.) bag Fritos corn chips
  • 1 cup shredded cheddar cheese
  • diced onions optional topping
  • diced jalapeno peppers optional topping
  • sour cream optional topping
  • sliced green onions optional topping
  • diced tomatoes optional topping
  • chopped bell peppers optional topping

INSTRUCTIONS

  • In a large skillet or pot, brown the ground beef, onion, and garlic at medium heat. Drain excess fat.

  • Add kidney beans, tomato paste, Rotel, chili powder, salt, sugar, and cumin. Stir together well.
    1 (14oz.) can kidney beans , 1 (5.5oz.) can tomato paste, 1 (10oz.) can Rotel diced tomatoes and green chilies, 2 Tablespoons chili powder, 1 teaspoon salt, 1 teaspoon granulated sugar, ½ teaspoon ground cumin
  • Turn the heat down to medium low. Allow the mixture to simmer uncovered for 20 minutes.
  • Pour a bag of fritos onto a serving dish then spoon the chili over the chips and sprinkle with shredded cheddar cheese

  • Top with additional desired toppings.

NOTES

  • Want to make this Frito Chili Pie more like a pie? Preheat the oven to 375 degrees F and coat a 9x13-inch pan with nonstick spray. Unroll a can on crescent roll dough and press it into the bottom of the pan, then top with the chili and bake for 20 minutes. Remove from the oven and top with the cheese then the corn chips and bake for another 5 to minutes.
  • How To Store: Store any leftovers in an airtight container for up to 3 days in the fridge. You can also freeze the Frito Pie Casserole for up to 3 months.
  • Could I Make This Recipe Into walking Frito Chili Pie? Absolutely! Just add a scoop of the chili to a single serving bag of Frito chips, and then you can easily enjoy it right from the bag!
  • How Can I Make This So That It Has More Liquid? Since this recipe doesn't have a lot of extra liquid, you could add a 15 oz can of tomato sauce when you add the Rotel.
  • Can I Make This Frito Chili Pie Without Meat? Yes, you can swap the meat out for two 14 oz cans of beans. Feel free to add whatever beans you like! You could try pinto beans, black beans, cannellini beans, or garbanzo beans.
