This Strawberry Earthquake Cake is a delicious easy cake full of flavor and special mix-ins. A strawberry cake mix get swirled with a cheesecake filling, white chocolate pieces and fresh strawberries. Topped with whipped cream, chopped strawberries and more white chocolate this is a fabulous dessert that elevates a box mix into something really special!
Preheat your oven to 350 degrees and grease a 9x13 baking dish.
In a large bowl, combine the strawberry cake mix, eggs, oil, and water that the box mix calls for.
Pour the cake batter into the prepared baking dish.
Melt your butter.
In a medium bowl, using an electric mixer, combine the melted butter and cream cheese until combined, then mix in the powdered sugar.
Drop the cream cheese mixture by spoonfuls onto the cake batter in the pan.
Break up one white chocolate bar into bite-sized pieces and add to the cake batter.
Add 1 cup of the chopped strawberries to the cake batter.
Swirl everything together.
Bake for 40-45 minutes or until a toothpick inserted in the middle comes out clean.
Allow the cake to fully cool before topping it.
Top the cooled cake with the whipped topping.
Use a potato peeler to shave curls from the remaining white chocolate bar.
Sprinkle the white chocolate curls and remaining 1 cup of chopped strawberries all over the top of the cake.
Serve!
NOTES
● Store leftovers in an airtight container in refrigerator for up to 3 days.
You can use a white or french vanilla cake mix for this as well.
You can substitute white chocolate chips for the chocolate bar if you like.
