Strawberry Earthquake Cake Ingredients

  • Strawberry cake mix- Boxed cake mix gets a couple of upgrades to create this masterpiece of a cake.
  • Eggs, oil, and water- Use the exact amounts that the back of the boxed cake mix requires.
  • Cream cheese- You’ll need one block for this cake. Be sure to let the cream cheese soften before you get to baking.
  • Butter- Combines with the cream cheese to create the swirl for your cake.
  • Powdered sugar- Also required for the cream cheese swirl.
  • White chocolate bars- You can use any brand you want.
  • Strawberries- Fresh strawberries complete this cake.
  • Whipped topping- I like to use Cool Whip, but you can use any brand or type you want.

How To Make Strawberry Earthquake Cake

Step One: Preheat the oven to 350 degrees F and grease a 9×13 inch baking dish. Set aside. In a medium bowl, combine the strawberry cake mix, water, oil, and eggs that the box mix calls for. Pour the batter into your prepared baking dish.

Step Two: Melt the butter in a microwave-safe bowl. In a medium bowl, using an electric mixer, combine melted butter and cream cheese until smooth, then slowly add the powdered sugar until smooth and creamy. Drop this by spoonfuls into the cake batter in the pan.

Step Three: Break up a white chocolate bar into bite-size pieces and scatter them across the cake batter and cream cheese mixture. Add one cup of chopped strawberries to the white chocolate pieces, then swirl everything together to create a marble effect. Be careful not to over-swirl the mix.

Step Four: Bake for 40-45 minutes, or a toothpick inserted in the middle of the cake comes out clean. Allow the cake to fully cool before frosting it.

Step Five: Spread the whipped topping evenly over the cake. Use a potato peeler to peel small slivers of the remaining white chocolate bar and sprinkle them over the whipped topping. Then, sprinkle the remaining chopped strawberries over the top. Slice and serve!

Can I use frozen strawberries?

You can, but I recommend using fresh strawberries for best results.

Can I swap the strawberry cake mix?

Yes, white cake mix or french vanilla cake mix will also work in this recipe. Be sure to follow the back of the box instructions to make the batter.

Why isn’t my cake marbled?

If the cake isn’t marbled, you may have over-swirled the cake mix before baking it. Unfortunately, there is no immediate fix for this, but next time, you’ll know not to over-swirl!
I recommend using a toothpick or a knife to gently swirl the batter together until it is swirled enough to your liking. A chopstick or the handle of a wooden spoon will also work.

Can white chocolate chips be used instead of a chocolate bar?

Absolutely!

  • 4 tablespoons butter
  • 2 ½ cups powdered sugar
  • 2 4 ounce white chocolate bars
  • 2 cups chopped strawberries divided
  • 1 8 ounce container whipped topping

INSTRUCTIONS

  • Preheat your oven to 350 degrees and grease a 9×13 baking dish.
  • In a large bowl, combine the strawberry cake mix, eggs, oil, and water that the box mix calls for.
  • Pour the cake batter into the prepared baking dish.
  • Melt your butter.
  • In a medium bowl, using an electric mixer, combine the melted butter and cream cheese until combined, then mix in the powdered sugar.
  • Drop the cream cheese mixture by spoonfuls onto the cake batter in the pan.
  • Break up one white chocolate bar into bite-sized pieces and add to the cake batter.
  • Add 1 cup of the chopped strawberries to the cake batter.
  • Swirl everything together.
  • Bake for 40-45 minutes or until a toothpick inserted in the middle comes out clean.
  • Allow the cake to fully cool before topping it.
  • Top the cooled cake with the whipped topping.
  • Use a potato peeler to shave curls from the remaining white chocolate bar.
  • Sprinkle the white chocolate curls and remaining 1 cup of chopped strawberries all over the top of the cake.
  • Serve!
