Whether you’re adding this simple syrup to your morning coffee, drizzling it over a stack of fluffy pancakes, or taking a cocktail to the next level, you’ll want a bottle of this to be stocked in your refrigerator at all times!

Ingredients such as frozen cherries, sugar, water, and vanilla extract slowly simmer until all of the flavors are perfectly combined.

Variations And Substitutions

Sugar- This recipe calls for granulated sugar. You can also use light brown sugar, dark brown sugar, honey, or maple syrup to replace the granulated sugar. Some of these options may alter the flavor, so keep that in mind while deciding.

Cherries- Fresh or frozen work for this recipe. I use frozen because I find it significantly easier than pitting and destemming fresh cherries. Frozen cherries also contain more water than fresh cherries, so they make a slightly larger batch of syrup. The choice is yours!

Vanilla- I use store bought vanilla extract in this recipe, but you can use homemade vanilla or even vanilla bean paste. If you want your simple syrup to be more vanilla-heavy, toss in some sliced vanilla beans.

How To Make Cherry Vanilla Simple Syrup

Step One: Pour all ingredients into a medium sauce pan over medium-low heat. Bring to a simmer.

Step Two: Once sugar is dissolved, set a 20-minute timer and allow the mixture to simmer, stirring every few minutes. Once the cherries are soft enough to squish, begin smashing them to break the skin open, allowing the cherry juice to come out.

Step Three: Remove from heat. Remove the cherries from the mixture and save for a different recipe or toss. Allow the simple syrup to come to room temperature for at least one hour before using.

Tips & Tricks

  • Only begin your timer once the sugar is fully dissolved. You want the right balance of simmering of flavors, while not over doing it. Over simmering this mixture may make it taste more like a jam or pie filling than a simple syrup.
  • Be sure to mash the cherries once they’re soft to get the ultimate cherry flavor! My favorite hack for squishing larger berries like this, is to run them through a lemon juicer. While this won’t work as well for fruits like blueberries or even raspberries, it works wonders for large fruits like cherries!
  • Wipe any fruit splatter up IMMEDIATELY, and don’t wear white unless you’re VERY careful! Cherry juice stains very quickly!

How To Store Cherry Vanilla Simple Syrup

Store this recipe in the refrigerator for up to 2 weeks. I do not recommend freezing simple syrup. You can double this batch for a larger yield, or half it for a smaller batch.

INGREDIENTS

  • 1 Cup Frozen cherries
  • 1 Cup Water
  • 1 Cup Granulated sugar
  • 1 Tbsp Vanilla extract

INSTRUCTIONS

  • Place all ingredients in a medium sauce pan over medium-low heat.
  • Slowly stir until the sugar is completely dissolved. Set a timer for 20 minutes, and continue to slowly stir, breaking apart the cherries as they soften.
  • Once the timer is done, turn off the heat and strain the simple syrup through a fine mesh strainer to remove all cherry bits and pieces. Allow to come to room temperature before using.
  • Use syrup in drinks, over pancakes, or as needed.

Store in the refrigerator for up to 2 weeks.
