I found this quick and easy chicken casserole recipe from @yourbarefootneighbor on TikTok and just had to make it! It requires very little effort and time. Simply dump the shredded chicken and veggies in, top with the creamy mixture, and then finish it off with the biscuit topping!

What you’re left with is a dinner all in one pan that bakes up in just one hour!

All About This Delicious Chicken Casserole Cobbler

Taste: Ingredients such as cream of chicken soup, butter, chicken broth, and red lobster cheddar biscuits fill this dish with lots of comfort food flavors! This savory one-pan meal can even be topped with shredded cheese for a melty, delicious finish!

Texture: The foundation of this chicken country chicken cobbler is creamy, with tender peas, carrots, and shredded chicken throughout. The biscuit topping adds a slightly crisp and golden-brown bread-like texture!

Comfort food tastes so much better when it’s quick and convenient to make! This is why I especially love this easy-to-make Chicken Cobbler recipe!

When making this recipe, you get to choose what’s convenient for you when choosing the meat. Maybe that’s using up chicken in the freezer or grabbing a rotisserie chicken at the grocery store to shred at home.

Variation Idea: You can make this Chicken Cobbler with turkey, making it a Turkey Cobbler! Allowing you to put turkey dinner leftovers to use as well!

Tips & Tricks When Making This Chicken Pot Pie Cobbler

  • Shredded Chicken – When a recipe calls for shredded chicken, I either boil the breasts or toss them in the crockpot on low for a few hours. When the chicken has an internal temperature of 165 degrees F, I remove them and let them rest for 10 to 15 minutes. Afterward, I shred the chicken using two forks or an electric mixer.
  • Vegetables – Though this casserole is typically made with frozen peas and carrots, you can easily swap them out for your favorite veggies. After all, the best part of any recipe is making it the way your taste buds prefer!
  • Don’t Mix – You will be tempted to stir the mixture together in the baking dish, but don’t! As it cooks, it all melds together perfectly. Just trust the process!
  • Let It Rest – When it comes out of the oven, allow it to rest for about 15 minutes. This rest time will allow it to thicken up a bit so that it isn’t soupy when you go to serve it.

How Do I Store Leftover Chicken Cobbler Casserole?

Either wrap the casserole dish tightly with plastic wrap or transfer the leftovers into an airtight container. Then store them in the fridge to enjoy for up to 3 to 4 days.

Can I Make This Recipe Pie Dishes Instead Of One Baking Dish?

Yes, you could make this recipe into two 9-inch pie plates instead of one 9X13 baking dish. It just may be challenging to try to split the ingredients equally between the two.

Where Can I Find Red Lobster Cheddar Biscuit Dry Mix?

Check your local grocery store, as mine does carry it. If you don’t have any luck there, Walmart and Target are known to have it as well.

Can Cream Of Mushroom Soup Be Used In Place Of Cream Of Chicken Soup?

Yes, cream of chicken can be swapped out for cream of mushroom. Just make sure to use the same amount! Also, keep in mind that it will alter the final taste of the recipe but still be super delicious!

Recipe Notes

We changed the recipe a little bit by reducing the amount of broth in the recipe to prevent it from being too liquidy (the photos in this post depict the original 2 cups of broth). We also found that reversing the order in which the broth and biscuit mix was added gave the casserole a crunchier biscuit topping as opposed to a soft one, my family much preferred this!

INGREDIENTS

  • ½ cup salted butter melted
  • 4 lbs shredded chicken breast pre-cooked or use 2 rotisserie chickens
  • 12 ounces frozen peas and carrots
  • cups chicken broth
  • 1 (10.5 oz) can cream of chicken soup
  • 2 cups whole milk
  • 1 (11.36 oz) box Red Lobtser Cheddar Biscuits mix dry
  • 1 cup shredded cheddar cheese optional
  • 1 tablespoon old bay seasoning (or seasoning of choice) optional

INSTRUCTIONS

  • Preheat the oven to 350°F.
  • Add melted butter to the bottom of a 9×13-inch baking pan and place the 9×13-inch dish on a large, rimmed baking pan.
    ½ cup salted butter
  • Add the shredded chicken to the pan, spreading around to make an even layer over the bottom.
    4 lbs shredded chicken breast
  • Spread the peas and carrots out over the chicken.
    12 ounces frozen peas and carrots
  • Whisk together the cream of chicken soup and the chicken broth in a medium bowl and pour over the ingredients in the pan, don't mix.
    1½ cups chicken broth, 1 (10.5 oz) can cream of chicken soup
  • Whisk together the milk, biscuit mix, and seasoning from the box. Add the cheddar cheese and old bay seasoning if using. Pour the mixture into the dish; again, don't mix.
    2 cups whole milk, 1 (11.36 oz) box Red Lobtser Cheddar Biscuits mix, 1 cup shredded cheddar cheese, 1 tablespoon old bay seasoning (or seasoning of choice)
  • Bake for 50 to 60 minutes.

    This was good. My 13 year old rated it a 6, my 15 year old rated it an 8, and I would have said about an 8 as well, makes it a solid family 7 which works for a quick weekday meal. In the future I would use the full 2 cups of chicken broth (felt like it could have used more gravy), and I would likely add some additional spices to the mix as it ate a little boring, but it was good as is and could easily be made better.
