What Are Po Boys?
Po Boys are a long sandwich that originated in Louisiana. These are typically served up on french bread, then stuffed with meat or seafood (typically fried seafood!) and topped with lettuce, tomato, and sometimes pickles, then slathered in sauces- mayonnaise, tartar sauce, or homemade sauce, like this recipe makes!
Po Boys can come in all sorts of different flavors and fillings. Fried shrimp, oysters, clams, deli meat, you name it! Want it spicy? Pour some hot sauce on it! Want it mild? Skip the hot sauce and leave it plain! Po Boys can be filled with anything; the possibilities are endless!

Shrimp Po Boy Ingredients
These Shrimp Po Boys are super basic and SIMPLE! Requiring less than 10 ingredients, you’ll love how easy it is to whip up dinner on those crazy nights or the nights when you just don’t feel like cooking for hours on end!
- Frozen popcorn shrimp
- Sub rolls
- Lettuce
- Tomato
- Mayonnaise
- Ketchup
- Worcestershire sauce
- Creole seasoning
Tips & Tricks
- These Shrimp Po Boys are best served up fresh and when the shrimp are still warm from the oven.
- I recommend only making the desired amount of sandwiches and try to avoid any leftovers. If you make too many of these sandwiches at once, the bread tends to get soggy from the sauce and it is hard to reheat when the sandwiches are assembled.
- The vegetables are optional, although they complete the sandwich!
- Pickles are a fun addition that gives some more tang to the Po Boy.
How To Make Shrimp Po Boys
STEP ONE: Preheat the oven to 425 degrees F and line a baking sheet with foil or parchment paper. Bake the frozen shrimp according to the package instructions.

STEP TWO: To make the homemade sauce, combine mayonnaise, Worcestershire sauce, ketchup, and creole seasoning in a small bowl. Mix until thoroughly combined.

STEP THREE: Open the sub rolls and spread a layer of homemade sauce across both open-faced sides of the bread. Add shredded lettuce, then tomato slices. Top with the cooked shrimp, then close the sandwich. Serve and enjoy!

Serving Up Shrimp Po Boys
Shrimp Po Boys are perfect for serving up for lunch or dinner! Since they are so easy to customize to each person’s liking, you really get to do whatever you’d like with them. I like serving these up with some crisp and salty french fries, crunchy potato chips, pickle spears, coleslaw, or hush puppies for a true Louisiana-style meal!
Storage Instructions
Since these Shrimp Po Boys are made to order, I wouldn’t recommend storing them as the bread will become soggy and the lettuce will wilt. If you must find any leftover ingredients, I recommend storing each ingredient separately so you can adequately reheat the popcorn shrimp before assembly.
