How To Make This Ice Cream Fudge

STEP ONE: Line an 8×8 baking dish with parchment paper and set aside. Be sure to leave an extra overhang on the edges of the baking dish so you can easily remove the fudge from the pan later on.

STEP TWO: Combine butter, sugar, and heavy cream in a large sauce pan. Bring this to a boil over medium heat. Once this mixture hits a boil, reduce the heat to medium-low. Cook for 7 minutes stirring consistently.

STEP THREE: Remove from heat and immediately add white chocolate chips. Stir until melted and thoroughly combined, then add the marshmallow creme and again mix until fully combined. Add the vanilla extract, then mix until fully incorporated.

STEP FOUR: Pour the mixture into the prepared baking dish. Immediately sprinkle the crushed sugar cones over the top, lightly pressing them into the surface of the fudge. Allow this pan to cool at room temperature for 30-45 minutes.

STEP FIVE: Once the fudge has solidified, lift the parchment out of the pan and cut the fudge into even-sized squares. In a medium microwave-safe bowl, add semi-sweet chocolate chips and oil and melt in 30-second increments, stirring in between, until fully melted.

STEP SIX: Prepare a baking sheet with parchment paper. Carefully dip the bottom of each square of fudge into the melted chocolate, then immediately in the chopped peanuts. Set the squares on the prepared parchment paper to dry. Repeat until all fudge is coated and set aside for one hour to harden.

Tips & Tricks

  • Don’t crumble the sugar cone pieces too small, you want the chunks to be about the size of a quarter or a grape!
  • Speed up the drying time by placing the fudge in the refrigerator until it’s hardened.
  • Don’t take any breaks between steps, you want to work fairly quickly. You can help this by preparing and measuring all of your ingredients before you begin cooking.
  • Dip the chocolate side of the fudge into the peanuts immediately so the chocolate doesn’t harden before the peanuts have time to stick.

How do I know if the sugar/heavy cream mixture is ready for the white chocolate chips?

You can test to see if the mixture is done by filling a glass or bowl with ice-cold water, then dropping one drop of the sugar/heavy cream/butter mixture into the water. If you can grab the ball and it has the consistency of a typical fudge, you’re ready to move on. If it is too soft and does not form a ball and stays soft, keep stirring, checking every 30 seconds until a ball is formed.

Can I use a different-sized pan?

Yes, you can use other-sized or different-shaped pans. Keep in mind that if you use a larger pan, like a 9×13 or a 9×9, the fudge will be slightly thinner than if you use the 8×8 pan. It is extremely important to cut the parchment paper so there is an overhang on the sides so you can easily remove the fudge from the pan.

INGREDIENTS

  • 2 cups sugar
  • 4 oz unsalted butter
  • 1/2 cup heavy cream
  • 12 oz white chocolate chips
  • 7 oz jar marshmallow creme
  • 2 tsp vanilla extract
  • 2 sugar cones crushed
  • 6 oz semisweet chocolate chips
  • 1 tbsp vegetable oil
  • 1 cup peanuts chopped

INSTRUCTIONS

  • Line an 8×8 baking dish with parchment paper (leave the edges hanging off the sides so you can lift the fudge out the dish) and set aside.
  • Add together the sugar, butter and heavy cream into a large sauce pan, bring to a boil over medium heat.
  • Reduce the heat to medium low, cook for 7 minutes, stirring constantly.
  • Work very quickly during this step: Remove the pan from the heat and immediately mix in the white chocolate chips. Stir until the chips are fully melted and mixed well. Add the marshmallow creme and mix well to combine. Add the vanilla extract and stir once again.
  • Pour into the prepared 8×8 pan. Instantly sprinkle the crushed sugar cones all over on top, lightly pressing down on them so they stick to the fudge. Let cool at room temperature for about 30-45 minutes.
  • Lift the parchment paper and fudge out of the baking dish once set and slice into equal squares. In a microwave-safe bowl, add the semisweet chocolate chips and oil. Microwave in 30-second increments, stirring in between, until fully melted.
  • Prepare a sheet pan with parchment paper. Working one square at a time, dip the bottoms of the fudge into the chocolate, then dip the chocolate into the crushed peanuts. Set each square down on the parchment paper to dry. Repeat until all the fudge is coated.
  • Let the chocolate harden for about 1 hour, then serve!

NOTES

Store in an airtight container for 3-4 days on the counter.
You can crush the sugar cones as thin and fine as you’d like.
You can speed up the drying time by placing the chocolate-covered fudge in the fridge until hardened.
